You can remove the hot candidate tag once the candidate is hired or rejected. Similarly you can remove the hot job opening tag once the job opening is filled or closed.
To remove the hot candidate tag:
Click Candidates tab.
Select a candidate or bulk of candidates.
Click Select actions and select "Remove the hot tag" from the drop down list.
